Cauliflower Cheesy “Bread”

- 1/2 head of cauliflower
- 1/2 cup mozzarella cheese, dry, shredded
- 1/2 cup parmesan cheese, shredded
- 1 egg
- 1 tbsp garlic, minced
- 1 tbsp dried oregano
- 1/2 tbsp fresh basil, chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 cup mozzarella cheese, dry, shredded
Instructions
- Preheat oven to 200°C.
- Make cauliflower ‘rice’ in food processor.
- Spread in glass baking pan. Bake 20 mins.
- Let cool 15 minutes.
- Put cauliflower rice in a tea towel. Squeeze out moisture. You should get about 1/2 – 1c liquid.
- In large bowl, mix everything together except the final 3/4c of mozzarella.
- Press into loaf pan (lined with parchment) or on a parchment lined baking sheet.
- Bake 12 minutes at 425°F / 220°C.
- Remove from oven, and add remaining mozzarella cheese.
- Return to oven until cheese is melted and browning a bit on top (5-10 mins).
- Remove from oven and let cool 5 minutes before cutting.
